Ayurvedic Apple Breakfast Bowl

As the air gets crisper and the leaves start changing color, our bodies intuitively gravitate toward warming and grounding foods. Here is a delicious (and easy!) breakfast recipe that provides high in nutrition, fiber, and taste (my whole family loves it!) and low in sugar and the time it takes to whip up is minimal, too :)

Ayurvedic Apple Bowl

Ingredients for one portion

  • 1 Organic Apple, peeled, cored & sliced into bite-sized pieces (if possible, pick a regional variety for freshness and to support your local growers)

  • 1 TB Coconut Oil (extra virgin and organic, if possible)

  • 1 TB Dried Cranberries or Raisins

  • Fresh Ginger (use as much or as little as you like) As a ginger lover, I use a chunk 1/2 the size of my thumb)

  • Fresh or Dried Turmeric - I use a 1 inch/2.5 cm slice since a little goes a long way

  • 3 TB of Porridge Oats

  • 2 TB of Flax Seeds (ground)

  • 2 TB of Coconut Flakes

  • 1 TB Morning Spice Blend (Recipe to come; for now use 1/2 TSP Cinnnamon, 1/4 Cardamon and 1/8 TSP total of Clove & Nutmeg

  • Sprinkle of freshly ground pepper (to activate the turmeric)

  • Hot water to taste

Instructions

Melt and gently heat the coconut oil in a small pan and add the turmeric and ginger, stir for one minute and then add the spices. Stir for another minute and add the apple pieces. Give it a good stir, lower the temperature a bit, and cover. Once the apples have softened (usually takes around 3 minutes), add the oats, flax seeds, and coconut flakes pour a bit of hot water on top (about 1/4 Cup for a müsli consistency or 1/2 cup for a porridge-consistency). Take off the heat and cover for another minute or so.

Top with a drizzle of maple syrup, nuts and dried fruit of your choice. For a deluxe version, sprinkle a dash of dried blueberry powder. It looks so pretty and is full of antioxidants!
